just another reason STL is an underrated area found the best grilled item that you really can't fuck up and tastes amazing, so perfect for drunk grilling
this reminds me of something else I ate regularly growing up that I didn't know was weird to lots of people until I got older toast with peanut butter + jelly which I just happen to be eating right now

anyone have a random ahi tuna recipe/dish? cook it about once a week. pretty much been the standard: evoo s&p marinate. sear while basting 1-2 times with a soy/pepper/garlic mix and then drizzle this on top after slicing. and do it with rice/veggie. wouldn't mind changing it up but only other way I've had it is salad/sushi

like that edamame salad as a side. big fan of veggie mixes. Last couple of weeks I've done: diced zucchini, tomatoes and corn pan seared and then put a red wine vinegar / scallion mix on it. good stuff
Office Potluck "picnic" tomorrow for 4th of July. After the baked potato and gravy cake's cornbread turned out awesome figured I'd use the rest of the cornmeal and make cornbread for this. Wanna do something fancy-ish. Was told that sweet Jalapeno cornbread was not Merica. so I'm gonna try bacon peanut butter cornbread
want to make braised mexican-ish beef for tacos, quick pickle some onion figure i'll get a chuck roast taking pointers for what all to throw in with the beef, I know lots of stewed dishes like this start with tons of onions/tomato simmering for hours before the even starts, not sure I want to spend that much time
If you're set on beef, then I can't help you. But man, I haven't made much more delicious tacos than the serious eats carnitas tacos (I combine the no waste carnitas from J kenji Lopez alt and the other top recipe on the site).

Made some chicken picatta and broccoli rabe tonight. First time making it. Turned out well. Used an ugly plate to honor the early days of the cooking thread.
Most Mexican recipes are pretty generic... I wouldn't try to get too crazy with it, beef provides a lot of flavor. Stick to your basic chili powder, cumin, garlic, onion. Chop up your favorite peppers in it and it really doesn't need too much more.
To mess with the flavor you can try different ways of incorporating the chiles, whether you used dried or fresh or roast them over your burner right before using them etc.
The carneceria by me steams their beef for shredded or barbacoa. Season, wrap in foil, steam till it falls apart.
When I do Chuck or arm I like to cut it into big cubes and leave the tops uncovered by liquid tip develop good Brown on one side I'd slow cookering.
LoL, phone and talking to some one else. Cube meat Season Liquid Leave tops of meat uncovered to Brown. It's good to place meat on a bed of sliced onion to hold above the liquid

I figured someone would mention that. The tuna is mixed with a bunch of stuff including soy sauce and lime juice which cures it kinda like a ceviche. I agree it would look better if it was a nice red color, but I prefer the taste will all the other stuff mixed in. Straight raw tuna tastes a bit bland to me.
Note to self: less is more. Cornbread was aiight but would have been better with just bacon and honey. Peanut butter turned it into a halfway dessert with too much moisture and kinda... Not good as a side with a meal. Win some lose some Would make for bomb late night food though
Just winging it tonight with what I had in the fridge/pantry. Base layer of quinoa and black beans with seasoning of s&p, cumin, and garlic. Next layer was roasted sweet potatoes and shallots. Final layer is sautéed chicken, which I topped with a quick little pan sauce of tomato paste, minced chipotles in adobo, garlic, and some pickle juice. Decided to also drizzle on a simple avocado sauce for some contrasting color and a cooling element to the chipotles. Not bad for just making it up as I was going.
I just braise the chuck roast with a can of chipotles in salsa and a bit of chicken stock. Very similar to a Chipotle version of barbacoa.
