Spoiler Added a couple new grill grates on the UDS in prep for Memorial Day. These are now 4" and 7" above the top of the firebox (18" grate wrapped with 12" expanded steel--10" of height above the grate). Even for longer cooks, I usually fill it up only 6" high, so the effective clearance of the new grates is 8" and 11". Looking forward to twice the amount of grate space and the possibility of drip pans, etc.
dropped a small butt and some cut short ribs about an hour ago. gonna be a day of hard labor, beer & bbq around the house today

First time all friedskillet grill action to start about 7hrs in, around 180 degrees took pic at around 190, ended up being around 195ish. took it off and covered in foil for about 30min. pork and ribs and the final product ended up fucking delicious. trying the pepper steak thing tomorrow
here is some stuff char siu marinated pork belly and tofu kebabs (possibly Iron Mickey approved who knows) smoking for another half hour before hitting the grill accoutrements: carrot/daikon radish/jalapeño/cilantro slaw to go on the sandwich and sriracha and kewpi mayo will post sandwich updates later on in the afternoon
it's a Japanese mayonnaise that is made with rice vinegar instead of distilled looks like this at the store
Love kewpie mayo. Just picked up a couple more bottles for the following: Alabama white bbq sauce, Franklin's cole slaw, habanero lime slaw, and roasted poblano and corn slaw. Cooking for roughly 20 people tomorrow. Four slabs of ribs, 10 pound pork shoulder, and beef ribs. First time trying this volume of food, so hopefully it goes well.

So a gathering with a couple neighbors turned into 60 people for tomorrow. Doing 2 butts, 4 racks of ribs and 30 chicken thighs plus burgers and dogs. These mooching ass neighbors I don't know can bring their own fucking sides
So did the pepper stout today. Used no green peppers, but rather sweet peppers instead. here are my two roasts on the grill here they are after a few hours when it hit 165ish here it is shredded final product with some collard greens and sauteed baby portobellos

If u have a Tijuana Flats Mexican restaurant near u they sell it there for like 7 dollars. This is their famous sauce, they just call it something else. It's were I got this one, but I'm pretty sure u can get in the ethnic food section of Publix
Smoked a couple of pork tenderloins today. Cherry wood smells nice. Jealous neighbors. Sides: pepper jack mac n cheese, backed beans, cornbread, pickles and fruit salad. S'mores for desert.
