Was looking at what is coming to Netflix in August and saw a documentary called Barbecue coming out on August 15.
Method: Smoke the wings at 225°F for 2 hours. (Or at 275°F for 1:15). Then remove and fry for 1 minute or crisp them up over open flames for a bit. Toss with sauce of choice. I use this rub: 6 Tablespoons paprika 2 Tablespoons ground black pepper 2 Tablespoons salt 2 Tablespoons sugar 1 Tablespoon chili powder 1 Tablespoon garlic powder 1 Tablespoon onion powder ½ teaspoon ground cayenne (red pepper)
Does TMB still have the Big Green Egg hook up? I think it was Zack Zedalis right? I'm probably going to get a new smoker here soon, my Ugly Drum has rusted out and soon to be dead. Either thinking an Egg or I kind of want a real nice reverse flow offset smoker.....like a Lang or something. (want something where I can smoke a suckling pig or young pig) If the Egg hook up is no more.....anyone have some offset smokers they really like? Lang is somewhat close to me in S. GA, but open to suggestions.

lang makes bad ass smokers i am an offset reverse flow guy, built mine myself about 10 years ago i love offsets
Any suggestions on brands besides Lang? I've always liked the look & room, and I really want a charcoal grill attached to it for full range of cooking. Lang will probably be the cheapest to ship since it is close vs ones made in Tx or the midwest. I made my Ugly Drum Smoker. I checked out a few DIY offset plans and I don't have the welding equipment.
May not be an ideal option, but if you live close to a technical college with a Welding program, check and see if they do live works for the public. If it is mobile, you could take the pieces in for them to weld for you for around $10 or so.
most high schools around here have shop classes that teach to weld we built all kinds of stuff for people in my high school shop classes
Lang is one of the best there is, no doubt. if you are in for spending the money on lang is the question there are lots of shops all over the country building high quality stuff these days google and see if there are any local to you, or close enough you could visit and check out their stuff
Yeah, I'm cool with dropping $1,500 or so. Most places I've found on google are either making big massive rigs or their price point is pretty much the same as Lang's.
its just experience IMO i never cooked on charcoal until long after i had built my trailer reverse flow smoker i grew up with a dad who only cooked on gas, i even built a 18" diameter gas "steak" grill on my trailer rig now i have a weber kettle and love charcoal i use a charcoal chimney to start the big pit now after that, its just a matter of learning the pit and how often you have to add a log of what size, etc
just pulled some bbq boys potato bombs off the weber, along with a couple of butter/bullion onions walmart thick cut ribeyes about to go on, saved the receipt in full anticipation of going back for the walmart 100% satisfaction guarantee refund on these steaks
Visiting the family...sister is moving to Indonesia Tuesday and wants her last meal to be a Shrimp/Seafood boil. I took on the responsibility of making it happen. Mom has the massive pot for it. Anyone have a good recipe?

Easy. All the seafood you want, potatoes (I like Yukon gold) Fresh corn, and Old bay. Obviously the potatoes go in first, corn second, seafood last. Only way to mess up is to overcook the seafood.
A halved lemon and sausage for sure. Onions can get fucked. That's a personal thing though. I hate onion.
New potatoes Smoked sausage Corn Vidalias Lemons (quartered) Shrimp Vinegar (~cup) Store bought Shrimp/crab boil seasoning Bring water to boil and add lemons, vinegar and seasoning. Add potatoes and boil for 7 min. Add sausage and onions and boil 5 min. Add corn and boil 5 min. Add shrimp and boil 3 min (at most). Sorry about lack of proportions, it's usually an eyeball thing.
$400 to deliver a smoker 200 miles seems a bit absurd, Lang. That's like 25% of the damn cost of the smoker
Spent vacation Day off work 8hrs+ driving $50 Truck Rental 500 miles of driving so $100 in gas. That's a lot to save $200. Just annoying more than anything.
Businesses routinely make shit like that cost more. If you're willing to pay for it, great they'll do it. But if you're not then no big deal
