Yeah, I've been looking at some pricing on Uship and it's cheaper. Might be able to go that route but my schedule is really shitty for the next few weeks and I was hoping to get it ready for labor day. I'll have to see

For over a year now my friends and family said they'd pay for my BBQ. So I finally told myself fugggit and let's see. Texted about 30 people I trust and said I'll BBQ brisket, pulled pork, and sausage for 16 bucks a plate for two people and I've gotten 17 orders. This shall be interesting tomorrow.
So thanks Mops for stealing my glory, but I also had a little paid event today. Friend's sister was getting married today and she's s strict vegetarian, so no meat option at the wedding. He asked on Monday if I'd cook up some food for lunch for the groomsmen and friends today. So did a little lunch for 15 Started last night after a full day of drinking (check the ND thread for proof. Had an Indiana mule (same as a Moscow mule, but we're at Indiana whiskey so...) in my hand at 945 am and kept going from there) Got a scare a 4. My cyber q or whatever started sending me low cook temp warnings at 2, that I didn't see until I woke up at 4. Raced over, thinking I'd have to get everything going and my food has been sitting there cold for 2 hours. Got there, everything was fine, it either corrected itself or was just an error. I ran through the good beer last night, too early to get replacements Finally this afternoon I was able to relax. Spent my earnings on this delicious local beer

Hear good things about the Bearded Pig in Jax. Adam's Rib Co in Gainesville is decent. that being said 4 Rivers in either Jax or Gainesville might be your best and most consistent bet.
I bought 30 pounds of brisket, 17 pounds of pulled pork, and 10 pounds of sausage. I didn't serve sides outside of Texas Toast. The brisket was good, but it wasn't my best. It was a bit dry. I think I should have wrapped it an hour earlier. My pulled pork was straight sex to the mouth, according to multiple people. I smoked it at 250 for 12 hours instead of 250 for 10. The sausage was great as well. People showed up way earlier than expected so I didn't snap pictures of the meat pre-cut, but here's a look at what our plates looked like for 16 bucks. Yes, I've created socials. The plan is to eventually do catering or pop up shows, but that's a bit down the road. Im just working on building the brand up socially right now. As for profit, I made a decent amount, but it was under the 40% ratio because I needed to make some one-time purchases like containers, sauce cups and lids, some spices I was out of, and a few other items. The profit will go way up next time now that I have some of that already, and I've already got 8 people who said if I do a cook in September they'll buy plates again, two of which have increased from one plate to two.
Hard to sear a steak on an offset, but it can be done. Before I went to the traeger I just used a weber coal grill for steaks. Or if it was small enough, my offseat had a grill grate I could put into the firebox and I did it that way.
Just make sure you get one that has an ability to put a grill grate in the firebox or modify it after purchase and you can sear just fine. This was seared on the grate in my firebox after smoking.
Not BBQ, but I made some Jim lahey no knead pizza dough last night to use for dinner. Been awhile since I've made it, pretty excited
Made "bbq" pork loin and corn I use quotes because I didn't smoke, just grilled and finished with some sauce
