New butcher shop opened up by my place a bit ago. I'm now addicted. Had their reg burger and lamb burger with watermelon rind tzatziki. This pork terrine with roasted mozz, watermelon, mint, and strawberry buttermilk was just so damn good. And it was $10 including tax. These guys fuck.
First attempt at making Okonomiyaki. The one at Xiao Boa Biscuit in Charleston is one of the best things I've ever eaten. The pancake is cabbage, carrots, scallions, and kale. Topped with furikake, kewpie, sriracha, fried egg, scallions, and pork candy floss.
Mexican fish stew Onion, carrots, fire roasted tomatoes, potatoes, garlic, shrimp, White fish cod, tilapia etc. Salt pepper, paprika, achiote chili powder, chipotle chili powder, oregano. Two ish teaspoons of each. Saute veggies, with spices Peel shrimp, boil shrimp shells with salt and bay leaf. 8ish cups of water. For 20 mins or so. When veggies are fragrant strain the shrimp stock into the veggie pot. Add potatoes and simmer until potatoes are cooked turn heat low. Shrimp and fish come last and just kind of poach in the soup. Garnish with onion and cilantro, lime juice. Salt and pepper to taste. Key is to put shrimp and fish in at the last minute so they just sort of poach in the stew and stay really tender. It was delicious. Also taking the time to make the stock from the shrimp shells

Had the homemade pickles on hand, so I roasted a pork loin (marinated in a mojo first). Sliced thin, added some ham and swiss, grilled, and Cuban sandwiches for dinner tonight.

I have the chef's knife and can confirm that it's a darn good knife at that price point. I use a honing steel before each use to keep it aligned and sharpen it it once a year.
It’s not a menu item but this is from the chef at Butcher & the Boar. I cooked them in a cast iron skillet until the cheese melted and prosciutto (subbed for Serrano) crisped up. It took about 5 minutes in the grill. For serving, smear the chipotle creme on a plate, place jalapeño on top, garnish. The chipotle creme was fire.
