Or roast/caramelize them and use them in your dressing (not stuffing unless it’s in the turkey - and you’re just wrong for doing that). Combine w/ corn bread, sage sausage, sauteed onions, garlic, and celery, an egg, and some chciken stock. Bake. Enjoy.

Anyone have any boneless chicken thigh or breast recipes? Every time I make chicken at home it’s bland as shit. Would love to make a good grilled chicken sandwich or anything really
If nothing else, take the time to pound the chicken into a thinner piece with uniform thickness. Using the flat end of a meat tenderizer will help ensure it cooks evenly and more quickly. If you also want to, you can cut it in half first to make it even thinner (I don’t recommend it). Simply salt & pepper and pan fry in oil. Guaranteed it will be better than what you’re doing now. Add flavor with some lemon juice at the end. Or marinate before in some Italian-ish dressing. But make sure to pound it out first. Then you have a lot of options.
I just season it with something like this Then bake it, and eat it with a hot BBQ or Frank's red hot sauce. I eat it about 4-5 times a week and never get tired of it. Can also make it into a buffalo chicken salad.
I marinade boneless skinless thighs overnight in soy sauce, garlic, ginger, red pepper flakes, and honey. Grill and finish with whatever sauce you want. Always makes for a good dinner and leftover lunch. Boneless skinless breasts are a definite pound out and turn into chicken parm.
Put something random and quick together tonight that ended up pretty good. Threw some seasoned chicken breasts in a pan with olive oil. Had a bag of frozen vegetable stir fry laying around. Steamed that in the microwave and poured into a bowl. Added the chicken to the bowl and then poured pasta sauce in. Then added garlic powder, oregano and crushed red pepper. I like to get thighs and let them soak for 24 hours in a mojo marinade. Then pull the chicken out, fire up the grill to burn of cobwebs, throw the thighs in the trash and head to Publix to pick up a delicious sub.

Did a chuck roast to 132 earlier this week. It was a cheap cut and was ok. Would have been better cubed, browned and braised with red wine.
