Working on the base/broth for smoked chicken posole verde for tomorrow. The chicken in the pot is for the broth and will be smoking one in the morning to put in the soup.
My slightly inebriated self had to read this three times to make sure you weren't going to smoke the chicken that you are boiling tonight
Curry goat from a Carribean mom who looks perennially disappointed in you behind the counter is glorious. Saw someone on twitter reference this woman by saying "she already has 'nah we nuh have dat' in the chamber when you walk up" which is a flawless description.
Smoked Bourbon Bacon Apple Crisp for TMB meetup today. Served with Creole Cream Cheese ice cream from New Orleans Ice Cream Co
Added chorizo to the bacon-wrapped jalapenos with smoked cheddar. Definitely doing that way from now on. Not even close to my best effort with the beef shank. Should have done longer at lower but got behind schedule last night. Taste was there, texture was off. The goat was a big surprise, was excellent. Was expecting it to be tough and overly-strong tasting since I was unable to secure the young goat yesterday and had to settle for cuts off a much larger one. Surprise, absolutely top-notch tender and killer flavor. The pozole stole the show though. First time making it and it will be a regular in the rotation now. First time I have made something for the first time and decided there is not a thing I will do different next time. Great time with BayouMafia buy_dont_lease Luka THF Bruce Bowen Zebbie Top notch people to eat and drink beer and maybe a little scotch with.
All the guys were great to hang out with. a.tramp sells himself short; the beef and goat both made for fantastic tacos. The smoked chicken and green chile pozole was unreal. His skills continue to be on another level. BayouMafia made a great smoked apple bacon cobbler with ice cream which was also outrageous. Also, the beer from Turning Point Brewary was top-tier. #blessed to be invited and not be in school in Boston or some shit that would have prevented me from attending.
6 limes and a red onion. Because I bought them and left them bagged at the store. So once again, he was clutch.
Banquet Beer and Miller High Life are the only mass-produced convenience store beers that I will allow to cross my threshold.
