Any concerns about a charcoal grill and offset smoker on a wood deck? I did this all through college but now my dad thinks it’s a major fire hazard and has been on my ass about moving it to the yard.
if it was a pool deck it would not be a hazard . wood - yard same unless he is having u put in dirt . ashes and cinders basically . use a chimney starter , off set is the bomb. just made killer T-bones . So my egg thermometer is stuck at 75*. Pulled it off and tried to recalibrate it to no avail. Guess I will just take it to my dealer unless anyone has any tips.
Did a pork shoulder for the first time this weekend turned out pretty good. Pulled it at 196 and probably should’ve let it go for 2-4 more degrees but I had to pull it so it could rest for a little while at that temp.
Found a recipe for sauce that was pretty good also: 1 cup apple cider vinegar 1 cup ketchup 1/2 cup brown sugar 1/3 cup yellow mustard 1 Table spoon onion powder 1 tea spoon garlic powder 1/4 teaspoon chili powder 1/4 teaspoon kosher salt 2 teaspoons worstershire Dump into medium sauce pan bring to low boil until reduced by a third. Changes I’ll make next time include adding some coarse cracked pepper, and maybe a touch more vinegar but i enjoyed it
On a side note I have a Rec tec Bull, because I have an 18 month old and wanted something that I wouldn’t have to babysit temperature on, and I really love it.

I do see there is one linked in the OP, but it's a Bayou Classic brand one and I have had poor experiences with a couple of their products in the past And it seems odd to me that Bayou Classic seems to have ones that are less than $20 on Amazon as well as ones that look very similar for over $100
I've got one of those metal ones with the three circles that everyone makes for like 25 bucks and it's fine but sometimes a little hard to use. Hasn't been hard enough to use for me to justify upgrading to one of those nice guns though
