    Brown sugar cold salt water brine for a few hours (make sure wings are broken up to absorb the brine) > drain/take off brine > bus tub> toss in Frank’s red hot, coarse ground black pepper, dry rub seasoning > smoke at 220 +/- until plump (2 hours +/-) > take off smoker cool down in walk in cooler > flash fry @325-350 until crispy > toss (glaze don’t soak) in wing sauce (franks red hot, white vinegar, honey, Worcestershire) > serve

    Aside from tossing in Frank's between the brining and smoking and not having a walk-in cooler, this is pretty much what I did. They were a hit, with one person saying they were some of the best wings they've ever had.

    My thighs get super moist and saucy

    Marinade for 24-48 hours in:

    Soy sauce
    Honey
    Red pepper flakes
    Ginger
    Garlic
    And a touch of sesame oil
    Water to dilute it down a bit

    Putting in an outdoor kitchen. I have about 10 feet to work with. My XL BGE and a sink are a must. On the other side, not sure what to put in. Should I do a small BGE or a gas grill? Thoughts? Wife is pushing for gas bc it's easy and she could use during the week when I'm at work and she's cooking. If I go gas, anyone have experience with Wolf outdoor grills? We are putting a Wolf range in the kitchen so it'd be cool to have them match but they are pricey and definitely overkill bc I don't see myself using it much. I'll always opt for the BGE.

    Can’t beat the convenience of having a gas grill in addition to your egg :twocents:

    A lot of them have trays for wood pellets too in the event you need some extra smoking space.

    Flat top griddle connected to propane/gas. Here is where you could potentially get the gas grill aspect or combo with griddle.

    I'm getting the blackstone flat top griddle in the new house.

    Kitchen range is gas and has a flat top so don't really need that. This would be a burgers and dog grill, honestly.

    What I came to type. It’s perfect for searing and larger cooks. Ultimate goal is to build outdoor space with kamado, flat and wood fire space for pizza/baking.

    I mean you have an oven inside, why put a BGE outside ?

    Was going to say in Georgia you can get great deals if you buy from Atlanta grill company. Has to be onsite though. I’m not 100% but I’d guess Primo is the same way, also in Georgia. A co worker and I almost drove down a few times to load up on shit but timing never worked out.

    Primo is made in metro Atlanta. Not driving there for a deal. Either one will be local from dealer or on-line

    I am currently planning an outdoor space too and have convinced myself I should go pellet grill instead of propane as a secondary piece to my big joe. It is still easy enough for my wife to use and doesn't sacrifice taste.

    Yep, they make a bunch that are actual built in but they are pretty pricey. I'm thinking about just having the guy who builds the counters incorporate a chassis that will fit a regular pellet, like a Traeger or RecTec.

    I’m with you, I found the best price on KJ personally. Check ATL grill company, watch them. I actually found a decent used grill, flipped it and bought from there. I want to say around this time of year, or in the next month, the prices for this year's model. If you purchase from them they drop ship for free.

    planning on using this guys method on the lobster tails, but I cant decide which to cook first, the lobster or the steak

    Gonna be good. Also if you both like garlic double or triple that amount. My wife makes this absolutely ridiculous garlic butter sauce when we have lobster, I could literally drink it. Picked up 10 ounce tails yesterday and then have this big ass Porterhouse.

    You can. Personal opinion on filets though is that it’s such an easy cut to get to perfect medium rare on a hot grill I don’t mess with reverse sear for them.
