    Honestly don’t know, I don’t Costco or Sams. I can tell you all their stuff is reasonable and I have not found anything to be out of line, or more expensive, on the cross checking I’ve done. They also have cooking supplies and other items like that for dirt cheap. We usually get a 1/4 or 1/2 a cow (locally) depending on who goes in and where we are at with freezer space. That’s enough to keep me busy but there are cuts you just can’t get from a cow here, aka my brisket is about the size of a slice of pizza off our little guy.

    Lastly I keep forgetting they sell restaurant quality lump there. Supposedly doesn’t spark and who knows what else. Problem is at any given time I have no less than ten bags so it’s never something I need there.

    Also final warning, you can drop some change there pretty quickly.

    Just picked up a full plate of short ribs and a rack of baby back for sometime this weekend

    Did my SRF tri tip at 134* in the sous vide for 3 hours and then seared it on the kettle for a few minutes. I sliced it pretty thick due to the fat content and enjoyed the fatty, beefy goodness. My wife said it was too fatty for her. Divorce impending. Steak and eggs for breakfast with the leftovers.

    I smoke at 275 F for 1:15, then into an air fryer for 5 minutes or so.

    Dome temp 300 direct low, grate temp is around 350. Smoking and frying is king but not always wanting to put that much effort into them

    The neighborhood requested chopped pork again so I have my weekend plans.

    I put them on the cold side of the kettle with my 'smoke n sear' rolling with some woodchips, so about 250 to 275 for a good while then throw them on the direct heat side to crisp up the skin

    I smoked some hard boiled eggs (shelled) to use for deviled eggs, that came out amazing

    decided today to buy a Weber kettle to do small stuff. Didn’t realize they were under $200.

    The grate* is closer to the fire. It’s why is Kamado bro’s use the wireless thermometers on bbq cooks.

    Hmm never tried the brand. Good rubs? Need some but wasn't planning on spending $100 on rubs lol. Good variety though.

    what is a typical cost per pound for beef ribs ? not short ribs , I'm talking about the dinosaur ribs. I bought one yesterday and it was like 8.99 per pound, a 2.5 pound rib, so one rib was close to $25. Is that typical?

    God damn at the price of beef, has doubled over the past few weeks. Bought another brisket today at it was $6.29/lb (for prime it was $5.89 for choice) at Sams. I'll be throwing this beast on tonight for some sunday funday eats. Food for tonight tho is some sloppy joe's.

    I mainly just eyeball it, but the rough recipe is

    1-1/2 lb cooked chicken
    1/4 cup mayo
    1 tablespoon dijon mustard
    1 tablespoon minced parsley
    1/2 cup diced red onion
    1/2 cup diced celery
    1 teaspoon minced garlic

    Immediately after taking that photo I put the lid on and the water bowl dislodged itself and spilled a little. Think it missed most of the coals but now I can't get it back up to above 240

    I've had that issue as the middle section has warped over the years. I've just been adding washers behind the supports to make sure the water bowl can't slip off.

    Doing steaks, pork loin, and shrimp tomorrow. Also found a recipe for a smoked pineapple I’m going to try as well.

    Had the egg about 700° for the steaks. The grilled corn and okra is basic but good as hell. Picked up the steaks from a butcher shop.
