    Pretty happy with the results on this one. Did not wrap, spritzed every hour starting at hour 4. I might wrap after 12 hrs next time, think that would be the optimal combination of great bark and maximum moisture

    I've been thinking about this lately. I did get a 30% off add from some internet sell and was going to get 100#, but now I don't get that discount.

    I did pick up a 40# bag from sam's for $9 that seemed to do OK

    Just bought a dual probe and an instant read thermometer from Thermoworks. Debating between ribs and a butt Friday/Saturday.

    In my experience, briquettes burn longer and more consistent in kettles. They also put off some pretty gross smoke on start/reload. I remember being able to get about 8 hours of 250* per slow n sear briquette load.

    Lump burned cleaner, but the volatility of the pieces caused temperature spikes for me. That was very painful in the kettle

    Long story short: buy a better smoker and keep the kettle for other stuff.

    Which brand of lump does everybody use? Just bought a bag of cowboy, but saw it get slammed a few posts up so I have buyers remorse. Thanks.

    Lol sorry. Cowboy used to be great but then they started using shitty reclaimed wood apparently. Your bag might be fine but I had one that no shit had roofing shingle in it or something. Like lit the coals and came back and noticed a portion of the fire going particularly hard in the paint. Managed to extract the oozy lump out with sticks and managed to toss in the yard where it continued to burn. It was legitimately some sort of tar.
    Royal Oak is best bang for the buck and probably most readily available. Publix brand is also good. There are more expensive options out there too like Kamado big block

    Edit to add I think your fine to use the Cowboy lump you’ve bought just make sure the coals that go in are consistent and keep an eye out for anything that looks out of place.

    I bought some Rockwood a while back because it ranked highly on reviews, but my experience has been underwhelming. Due to an Amazon shopping cart screw up I ended up buying two bags, and I'm halfway through the second bag. It burns faster than Royal Oak imo, there are very few pieces bigger than the palm of my hand, and each bag has a ton of tiny pieces. Thumbs down.

    Fogo is awesome but pricey. Royal Oak is my go-to for price point and availability.

    My first batch it completely burnt out on me while smoking a butt. It was full too. Second one I had a brisket on for well over 15 hours. Real slow overnight, like didn’t get over 190 slow, and when I cleaned out the next day it was like I didn’t even put a dent in it.

    I found multiple rocks in the one bag of Royal I bought. It also seemed hollow, the pieces were smaller and overall felt cheap. Tbh, I may have spoiled myself by buying Fogo first. But it’s exponentially better than Royal in my limited experience.

    Good friend of mine likes Rockwood pretty well.

    Looking on Amazon, Victorinox is probably the way I would go because it has the plastic handle so it can probably go in the dishwasher

    I have this knife. It works fairly well. Definitely good value.

    I personally never put knives in the dishwasher though.

    My other good knives I dont, but the ones that i got from my old roommate I do because they he did and I don't have any attachment to their value really.

    My fucking nanny puts my Shun knives in the dishwasher :angry:

    I never would have bought this on my own, but my sister got me this as a gift a few years ago. I was reluctant to use it at first and was tempted to return it, but it really makes carving so much easier. I do have some really nice traditional knives, but from a time and consistency standpoint this has made such a huge difference. Would love a cordless version though. Always afraid that I may cut through the cord at some point.

    What's the tread's take? basically like brisket, right? Salt & Pepper, 250 until like 165/has a good crust, then wrapped until done. Probe tender, usually 200ish.
