What was the spice level on that steak? Cooking for a little person, but I've never worked with gochujang
Sous vide grass fed NY strip. 129 for an hour sear in cast iron and Spooner butter garlic over it. Red potatoes with skin on, green beans were just frozen cooked in chicken brother with bacon and garlic. I also finished my wife's in the over for a few minutes as she likes her more medium.
Making this gochujang marinated steak tonight. Also using flank instead of skirt because that’s what I have.
The last visit I had to 4Rivers was actually pretty good. Their new farm project is cool. His politics suck but whatever. Poms is just so mediocre it hurts. Nothing special and the people that work there/eat there are pretentious fucks over a bleh sandwich.

Wife was worried about the gochujang marinade (she’s a ‘prove I like it’ type) so I made it half Korean marinade and half traditional American seasoning. gochujang was better for both of us. made some twice baked potatoes with the steak. pickled shallots not pictured
One mistake was putting too much rub on the meat, you can clearly see it in the last picture. One of them Is kind of overwhelmed with rub. They all were actually, it was too salty and a little overcooked. But it was still pretty good. Next time, less rub, focus on not losing any juice and I need more sauce. it’s a 4-5 hours cook but not very demanding.

Make at home steak sandwich kit with a Caesar Salad. What I love about these kits is I’m not making a balsamic reduction to dress micro greens as well as caramelizing onions for a meal on a Monday, not to mention finding that quality of ciabatta. But when a restaurant gives me mise en place I will make it on a Monday.

I did another rando puree (of questionable puree-yness but whatever) with scallops, beat the shit out of some past it broccolini and threw in some short grain brown rice that I cooked a little in the scallop pan. Puree was some yellow sweet peppers, rapeseed oil, rice wine vinegar, lemon, salt/pepper, and chili flake. It was fucking tasty lol
