Apparently we are having a brisket shortage in the area. Sucks, off all week and wanted to eat that fucker all week. Anyhow bought 50 lbs of butt at .39 cents a lb. Good night my sweet prince, sleep well at Meat Church.
Since there was no football played today I spent the day In the backyard Tossed half the wings in a spicy ranch dry rub and the other half in some Franklin’s espresso bbq sauce I had left over from weekend before last. Had to smoke in two batches. texasraider And a tri-tip
My local grocery store. I get entire loins for dirt cheap there as well, people just don’t buy them then they get marked down so much it’s just a matter of timing and luck. I go pretty much every day a few weeks after New Years for the loins. Shoulders is hit and miss but I buy them out every time. Tonight was just luck, had a woman stop me and ask what I was making with all of them. I wanted to say babies in your vagina but she was 60 plus and I have a wife.
no pics because alcohol, but holy shit. I am never buying ground beef for burgers again. mine was even done a little more than I usually like, but still super juicy, tender, and full of flavor.
So please don’t judge me as this is embarrassing enough to admit, but today was the day I realized I have been cutting skirt steak wrong my entire life. Cutting it against the grain makes it so much easier to eat in tacos and well everything when it’s not cubed.

I was watching a video this week when a guy talked about cutting against the grain and then showed why it makes it so much easier to eat. It’s like a lightbulb went off.
I’m also getting rid of our grill and getting a smoker. We don’t have room for both and I’d rather have a smoker at this point than a grill that we never use.
It’s just a dyna glo grill. Not sure what type of smoker to get. Just don’t have room for both on our back porch area and I think we’d get more use out of a smoker than a propane grill.
That’s what we were looking at. My in-laws brought one down the last time they visited and it was nice.
