    90% rain coverage for the next 60-72 hours and I work outside doing electrical and plumbing. This is an unscheduled vacation and I plan on being aggressive af. I honestly need the down time.

    Enjoy it brother. I took the week off as well as we are going to see my brother this week (we all took covid tests Friday to be careful) so I am debating what all I am going to cook.

    Defrosting a pork shoulder at the moment, probably going to do that tomorrow. Considering heading to the store for some chili ingredients in a little bit. It’s that kind of week.

    The Serious Eats' recipe for Caldo Verde is fantastic and so flexible if you don't want to use sausage. Any meat will work.

    Update - I made this recipe (https://www.oliviascuisine.com/caldo-verde/) and it's tasty as hell. I will definitely be sampling other caldo verde recipes as there appears to be a lot of variety out there. It seems like most recipes call for kale and not collard greens but collard greens >>> kale so I'll probably stick with that. No pic because honestly it was pretty ugly.

    Oaxacan lamb barbacoa tacos. Seared, and then cooked in a marinade with orange and onion for three hours. Served with yellow rice w/ olive oil and capers

    Nope just making a whole salted ham. Thankfully ham freezes really well so I'll be throwing it in soups for a while.

    Frozen ethnic foods are probably my favorite but I’m a certified sucker for just about everything they sell.

    Adding on snacks and essential items like rice, etc. are always good and priced well. Don’t expect the produce to be top notch or a wide selection. Go get your meats from a regular grocery store.

    I get annoyed by Trader Joe’s because you can’t get everything you need there.

    However the wasabi seaweed snacks you can only get there is a top 5 healthy snack.

    Also the sunflower seeds is a great buy there. Huge pack for a dollar.

    Yeah, it’s definitely a boutique grocery store. The only animal protein we ever really get there is the wild sockeye and various chicken sausages. The snack game is absurd as you said.

    I haven’t been in a while, but I did forget about the chicken sausages. Just as good or better than the name brands and like $2 cheaper. I try to keep a pack or two in my fridge at all times in case I’m out of proteins.

    It’s an essential in our fridge. Their salsas are great as well. They make a chili sauce that is fantastic.

    Trader Joe’s meatloaf is damn good. I usually slice a couple servings and heat them up in a nonstick pan. A little water to steam and cover for 5 mins. Then lid off to put some crisp on the slices.

    Works out great for an easy meal after a long day.
