It’s super easy and I never really follow a recipe, but there are plenty of them out there. Roast your butternut squash then throw it in the food processor with a splash of milk to get a nice, smooth texture then add it back to the roux/cheese blend. I cut the amount of cheese I normally use by about half. Gouda and gruyere go really well with it, as do nutmeg and sage. Then just bake as normal.
We’re doing a small (6 person) Thanksgiving, and as such, oyster dressing was nixed from the menu which is a major bummer.
