I have seen a recent uptick in people wearing Carhartt gear. Glad to know I was being crazy thinking it was becoming more common to see.
My FIL wears carhartt almost exclusively. He owns a dairy farm though and has never worn shorts a day in his life.
I wear the heck out of Carhartt. I like getting more than one year out of things. Good to be able to see items for size, etc. locally rather than catalog stuff like Duluth or Filson. I know none of it is made here, but even the t-shirts are heavy cloth and last forever.

Was gifted a Carhartt coat a few years back. I shovel snow in a teeshirt with that thing on and sweat my balls off. Carhartt is what it’s all about.

What you're seeing as "trendy" is Carhartt's WIP (Work-in-Progress). They basically licensed the logo to European designers. It's a lot more expensive. Champion did something similar and started collaborating with already popular brands and got lucky with the trend of vintage/nostalgia wear.
Yep, my SiL (21) asked for a blue carhartt beanie for Christmas. I asked her if she had a cow to milk too. She had no clue what I was talking about, said they are "trendy"
