    My nice filet knives are rare as fuck, Jimmy Lile. (He made the Rambo Movie knife as his claim to fame.) His shit is worth a fuck ton if it's signed(stamped is worth some but not as much) and they hold an edge FOREVER.

    You don’t have to get super fancy with them. You just need a quick & easy sharpener & honing steel. They need sharpened & flattened a lot. I picked up some at Sams (white handled, cheep commercial stuff) and they work as good as any others I have used.

    Worked really nice carving my rib roast. Planning a brisket cook this weekend so I'll see how it does trimming raw meat. It is very sharp out of the box. Took a nice little sliver of my finger off when I was cleaning it after dinner. I didn't take into consideration that the blade got wider as you moved away from the hilt so when I dragged the sponge along the blade...shit happened.

    This is today, 11 days post cut.

    Low (180) for 1 hour (for smoke penetration)
    bump to 425 until breast and thighs come to temp?

    Haha, took some PTO so just playing around. Sending food to the parents as well.

    My last smoker died a little over a year ago so it was just a year of smoking on the weber kettle. Really enjoying this set and forget stuff. anyone consistently keeping a weber at temp should get an award

    Slow n sear on the kettle is amazing
    Not like set a thermostat and forget it, but it's pretty great

    I prefer to go halves so I can pull the inevitably smaller one first. Otherwise, I try to stay at 300deg and pull when the breast meat is 150.

    After I while I started using the snake method with coals. It was pretty steady on temps once the initial madness settled down

    I think chicken accepts smoke fine and can "oversmoke" unlike beef or pork. I wouldn't bother.

    Thinking of getting a smaller pellet smoker to round out my arsenal,
    Thoughts on the traeger tailgaters vs green mountain Davey Crockett or other similar sized units?

    I think the ones from Myron Mixon or stumps are probably really good
    The only cheaper option doesn't seem to be doing so well

    Does anyone have a two burner gas grill?

    Im going to have to use one without a built in temp and won’t have probes. I’m trying to gauge what would put it around 275-300 degrees if I want to cook indirect. Left burner on like medium and right burner off?

    I have a Weber Genesis II S340 LX and I love it. It’s 3 burner, but they make a 2 burner version as well

    I have this one but they added a forth burner between the middle and right to make it a searing area. Does a really good job without having an infrared searing zone. Got mine from Costco and came with a built in temp monitor that hooks up 4 probes.

    Great for mid week quick meals. But if I have the time I use the BGE.

    You are using a grill that you've never seen, don't know the brand of, and don't have temp probes
    And you think we can answer your questions about this grill you know nothing about?

    That said, Google about Steven raichlen's hand temp check method
    He does it a lot on his shows, I'm sure there is info out there
    Basically he holds his hand above the grate, counts one Mississippi, two..... until he can't hold his hand there anymore and how many seconds corresponds to what the temperature is

    I appreciate the recommendation, but I'm not buying a gas grill. The house we'll be renting for 13 weeks has what appears to be a shitty 2 burners grill. I'll probably go without smoking meat until April

    When I started I was on a Weber 2 burner that was in rough shape. I would just put the front burner on low and turn the other one off and it worked just fine for ribs and butt.
