We have brand new grills outdoors at each complex but aren't allowed to use them due to COVID restrictions - which definitely sucks. Wife just bout a NINJA which is basically the size of R2-D2, so going to start making attempts at cooking with it this week.
It's huge apt complexes - so all the amenities I paid for (gym, rooftop, pool, lounge, outdoor cooking areas, etc.) are a thing of the past.
Seriously, get a Sous Vide and a cast iron/carbon steel pan and you should be good to go with anything you need to cook on the grill.
Re: mortar/pestle One of my favorite condiments to fuck around with has become "tiger bite" sauce. Roasted/blistered cherry tomatoes, garlic, peppercorns (ideally something more fragrant than straight black ones) fish sauce, cilantro, chilies (whatever), a little brown sugar, lime... But fuck do the tomatoes make it a mess smdh
This was one of the best things I’ve ever made. Basically a cross between a Greek salad and pasta salad. Loaded it up with sliced sprouts, tomatoes, and onions to keep it a little lighter on calories and it’s genuinely bomb
If I used chocolate that’s 53% cacao in a brownie recipe that calls for 99% cacao, what will happen? We’re about to find out because I didn’t want to go to the store for 1 ingredient. I’m not a baker

Anybody here ever use goldbelly? I have a $75 gift card and I’m thinking of ordering some barbecue on there. I live in NYC so I don’t want anything from here. Open to any recommendations either barbecue or other foods.
It’s too early to see it with great frequency. 3 kids at home is just impossible to dedicate a lot of time. We do have in-home nursing now which makes it a little easier but they leave at 4 so not the easiest for cooking. For Christmas my wife did buy me a season pass to a cooking class every 2 weeks so there will be more. (She is smart, a gift that she benefits from)
Yeah, it was caramelization of the glaze. He said it should look like bark on a brisket but it was further than that. It was done with a low broil but I think convection would have been better.
