I’ve never removed the membrane from ribs either. Definitely need a better trimming knife for brisket, but like you said, I think if it’s a good cook then it’s going to take care of itself.
I definitely pull the membrane. Easy to do with a paper towel, also helps to allow more of the rub to penetrate on that underside.
Looks good but it’s too bad you didn’t get a traeger bc then you could have said “finally pulled the traeger” and it would have been funny and we all would have laughed at your wordplay
Traeger was under consideration for a while but just read too many shitty things about them. Would have been worth it for the joke though.

Somehow this 15 lb beast finished in 11 hours. No idea how, smoker never got above 260 F. Guess it will be an early supper.
Completely forgot to document my rib tips. They came off late last night after I had already gone to dinner, so, now I have 10lbs in the fridge I need to figure out how to re-heat for dinner.
Doing 5 racks of baby backs today on the Kamado Joe Classic, never done more than 2 at a time before today. Barely fit onto the smoker even with the rib rack accessory. Not happy with where the bark was at after 3 hours, I think the meat side of the ribs didn't get as much heat as the backs did because of the vertical cooking. They smell absolutely amazing though, I'm sure they're going to turn out just fine, but maybe not up to my high standards for when I cook 1-2 racks.
I say sous vide as Ive brought mine to work to reheat some frozen pork belly burnt ends tonight and some Arkansas green beans I made a while back.
cooked incredibly quickly and I couldn’t really figure out why until I cut into it. Incredibly fatty piece of short ribs. Very tasty, but overall disappointing
I’ve heard of people that use the racks finish them for a bit on the grill when they sauce them up at the end.
I fucked around and found out what happens when you get a ham from Walmart. The whole fucking the was falling apart as I was pulling it out of the package and I did my best to salvage the sloppy mess. I learned my lesson today. Don't wait till about the very last minute to get a ham and don't settle for a Sam's choice one. Just keep looking. Still pretty good considering technical difficulties.
My wife is out of town this weekend. Thinking I’d like to smoke something small for myself. Any recommendations on something that’ll be good for one person? Most things can feed multiple people. Don’t want to do wings for a third time in less than 2 weeks, lol.
