Made "carbonara" with some bucatini we had lying around. Subbed in pancetta and a mix of white pepper/red pepper flakes instead of cracked black pepper. Also threw in some squash blossoms we needed to use up.
it’s a little tough to get the ratio of meat right due to how fat or lean the pork is but I feel like that’s a pretty good ratio

you will trim and toss quite a bit. My recipe makes a good sized stock pot. It freezes well. I usually try to find a small butt or do two packages of pork steaks
My favorite sandwich (BLT) is such an elite quick Friday night dinner when when you don’t want to cook or make a bunch of dishes. Lightly toasted bread, mayonnaise (I like Duke’s), high quality tomato seasoned with salt and pepper, whatever lettuce you like, and some good smoked bacon. my wife eats hers with cheese instead of mayo like a monster. :chef’s kiss:
The people who are horrified or grossed out by mayonnaise will never experience the perfection that is a great BLT and I rightfully believe this is god’s punishment to them for having such a horrible take on mayonnaise.
i dont even understand logistically how you carry out mayo hate just so many things have mayo as ingredients, all that shit off the table? insanity
My wife will eat mayo based foods but not straight up mayo, which makes no sense. Like she loves patatas bravas or bang bang shrimp, and a million other sauces I make with mayo.
Mayo kinda grosses me out if I see a big schmear of white but if its subtle or mixed with other stuff I don’t mind it, I pretty much never put it on anything I make myself, I’d rather have dijon on a sandwich.
BLT’s are literally the only thing I can eat with Mayo as a condiment. I can’t do ketchup either. I have other reasons for ketchup. I can eat it if it’s mixed with other ingredients like in cole slaw… just not on a burger or sandwich.
Mayo as a standalone condiment has minimal uses. But you start adding stuff to it and you've got a stew.
I grew up thinking Miracle Whip was mayo because that is what my family called it. I haven’t had it for years but my recollection is miracle whip sucks. At some point I realized flavored Mayo (like chipotle Mayo) was delicious. Then I made Mayo in a cooking class and that was delicious. I guess I’m a convert now.
Yes, I’m not a fan of cream cheese by itself but flavored can be good. Greek yogurt (Fage) would be similar. It’s fine but not great until you add flavor and use it as a vehicle for that.
i still like miracle whip occasionally, mostly on turkey sandwiches, i too grew up with it midwest loves some miracle whip
I was making chicken strips the other night and I made a wet batter with chick fila sauce bc I didn’t have mayonnaise. it was Panko coated GF strips my wife wanted. Turned out pretty good tbh
