I have a real small smoker so one side of the meat get pretty close to the heat. Was lazy this time and didn't rotate anything, hence the bark.
thanks. It worked out pretty well. Seared it in the skillet with some ghee and then brought it up to temp indirectly. It could’ve been better IMO, but it got good reviews.

does anyone have a recommendation on a smoke tube or tray? I have an electric smoker and although it's temp control is outstanding, it doesn't put out much smoke at the low temps I'm trying to use on fish, which means I keep having to turn it up hotter than I want. anyone have any thoughts, recommendations, or prayers?
An offset smoker is basically a smoke tube. I recommend that, in general. Admittedly, it would be tricky to do fish at a low temp, but possible.
Made chicken wings on the egg. 400* direct for 50 minutes over hickory. Four ways, salt & pepper with Frank's on the side, garlic parmesan, hot honey, and everything. No pics.
