Ever since I read Kitchen Confidential, I dice all garlic/onion/etc. with a knife rather than a chopper/garlic press. Too cunty?
Just remember: the slowly adding liquid and constant stirring is a cruel joke by old chefs that they never let modern folks in on. Completely unnecessary for a perfect risotto.
Man, cooking an extravagent meal on Sunday night, with SNF on while drinking good beer, is one of my absolute fucking favorite things in the world.
Remember that thread years ago talking about how the NFL was unwatchable? I didn't understand it then, and still don't. Who wouldn't want to watch a sport we love being played at the highest level? Add in some good food... that's a nice night.
I've become more of a fan over the past few seasons. It still doesn't have the same environmental excitement, to me, as college football does...but yeah no doubt the skill of the NFL dudes now days is crazy.

Broiled lemon herb catfish tonight. Sides aren’t too exciting. Steamed broccoli and air fried sweet potato rounds.
I got this at New York butcher out on Roswell. I like it a bit more than Midtown Butcher, but really don’t get out there very often. Our vet is out that way, so pretty much the only time I go is when I’m dropping off/picking up.

Roasted a pork tenderloin with a garlic herb marinade. Served it with some store bought ricotta ravioli that I made a simple roasted tomato and red pepper cream sauce for.
This is super internet food nerdy but if anybody else has seen the Sporkful podcast’s quest to create a completely new pasta shape (took like a year of research) I was able to get some at Fresh Market today as it has been sold out. Making some tonight with a meat ragu with peas for National pasta day.
Little Japanese/Southwest fusion tonight. Shrimp burgers with toasted brioche bun, chipotle aioli, avocado, cilantro-lime slaw and Japanese Togarashi sauce.
Made pizzas tonight on the pizza oven. Kenji’s dough and sauce are just perfect. Layered salami, ham and a little bacon under the mozzarella and pepperoni on top.
