Also, if you have an annoying family that insists on roasting the whole bird instead of spatchcock- the upside down method works really well. Keeps the white meat moist
Picked deep fried. But my family usually does a spatchcocked one as well (The best way to cook a turkey IMO).
We’re going to my parents, and my mom roasts her turkey. We also have ham and smoked deer loin wrapped in bacon.

Can you dry brine the day before or is it too late? We have so much going on my wife misread the directions.
Fwiw I watched this the other day and am not convinced dry brine on a turkey is the move. Seems basting is more important. May try the upside down method this year.
I let my wife try and handle it but we don’t even have anything to cook the damn bird on in the oven or any ingridents. She just thought she could put them on late tonight after kid went to bed and it would fine.
Fuck. We don’t have any of the stuff to dry brine, spatchcock or cook the turkey. She said she was gonna go get it all later tonight. Gonna call Ragin Cajun when they open and see if they have extra Cajun fried turkey for sale. She does this all the time. She’ll get all excited about cooking something new and leave me out of the loop and I find out last minute and have to scramble to fix it. Every. Damn. Time.
No concept of timing whatsoever. Thinks everything is like a couple of hours and it’s fine. Smoking meat is her worst enemy cause she wants to pull it after a few hours and it’s still raw
Thank god for Ragin Cajun. Trashing this turkey and doing what we should have done from the start. I didn’t even think about it but we can’t fit a spatchcock turkey in our fridge. It’s too small. You can’t fit a pizza box or baking sheet in there.
I don’t have anywhere to put it. I don’t have anything to put it in that would fit in the freezer. I don’t even know if I would have liked dry brined sparchcocked turkey anyway. I only like Cajun fried turkey and smoked turkey legs. I don’t eat regular oven roasted turkey.
I’ve posted it in other thread before but here’s why Hoss won’t eat most turkey. -As a child my grandmother would do a traditional oven roasted turkey that was the driest thing on the planet. I would have to always be forced to take a bite of it and that’s all because I hated it. -My mother took over thanksgiving and would order a smoked turkey from a local bbq place. My mother only eats meat well done. Has to be burned (same as her mom and dad were). So she’d buy a full cooked smoked turkey and put it in the microwave when she cut it up and nuke it until all the meat was white. No pink. I never like turkey until I had a smoked turkey leg at BBBQ bike rally and then tried a fried one.
I’ve posted this before but I also never had a decent steak that wasn’t burned well done until I was with an ex and she had me order a medium one. I was in my mid 20’s and thought all steaks sucked until then.
We got the fried turkey we always get fortunately. I don’t know why we tried to fuck with perfection. If not we would have just ordered out from somewhere though. I don’t give a shit just trying to help her deal with the non-big family holidays since they all live over 10 hours away and don’t come here so I’ll be damned if I go there
Didn’t have either or anything to roast it on or put it back in the fridge on once dried and brined. A baking sheet won’t fit on our fridge shelves. We had it In sous vide liner.
