I’m pretty lucky, when I move back to Nebraska my dad manufactures and designs a ton of agricultural stuff. Grain pits and what not and his company has all the equipment. I showed him Franklin’s design and some other styles and he said, ‘that won’t be a problem, I’ll build you one when you get back.’ I’ll pay for steel, but I’ll be able to get a $3000+ smoker for pretty cheap. Looking forward to helping him do it because spending time with the old man as an adult, even ‘working’ is going to be awesome for something like that.
I dunno where you live now, but I'd be making trips home to build that MF with him as often as you can. Make it a weekend a month, or take a week vacation and just get there and knock it out. Then you'll already have it and won't take the chance of missing that opportunity
I’ll be about 2 hour-ish from him. He is a boss of a man. Can pour a shit ton of concrete a day, climb 100+ foot elevators legs and is almost 65 with 10-12% body fat at 6 foot and 170. Smart as fuck as well. Kind of one of those people that is good at whatever he puts his mind too (1 of 12 children and got stuck in middle so college wasn’t the ideal option, even though he was really smart, and now co-owns a very successful company). He doesn’t **have* to still do the manual labor but he fucking loathes office work so avoids that at all cost. I on the other hand do not have that ability. I’m better than the average guy but it all comes difficult to me. Having said that, I will be doing what you said. Calling him and bullshitting from Oregon is awesome. Even when we disagree we have gotten to the point where we hear each other out. Love that man even if he can still kick my ass to this day. (He is a good cook, but I can out grill him at this point and I can tell that makes him proud in its own way)
Will do, should be in second half of this year. I’ll go home to help him on a few weekends and we will watch Husker football together and want to die. Got to make sure part of the weekend doesn’t suck.
Part of the company also does (the largest part, weirdly) shit pumping (taking shit out of a lagoon and putting it as fertilizer over a field close or several miles away in a giant hose). They build a lot of their own trailers & stuff because custom works better, is cheaper, and it’s a very niche field so it helps them streamline how they do it. I’ve totally thought about having him do me a custom, pull, pit…but I’m not nearly a good enough bbq’er to even think about this.
Your dad should quit and start making BBQ pits and tailgate BBQ trailer pits. Like, we could start up a TMB BBQ Thread VC fund for seed capital.
I’m going to be blunt. Being in the shit pumping business and building elevator legs in northeast Nebraska (and shit pumping the 5 states around Nebraska) has made it niche enough that it would take A LOT of overhead for him to even think about lol. I remember growing up where we weren’t poor but money wasn’t something that was abundant. Didn’t know what a plane was till my 20’s. Business is not at this point now. At all. Proud of my old man. Especially since he/they pay for covid and shit if they get it. Even if a bunch of Trumpers are prevalent in company and town.
Agreed he should create an Instagram account and document every step of the way. Great way to share the story.
Build you a backyard one first Then build a trailer rig. My only stick burner is my big trailer and has been for 15 years. It's a beast, but cooks one brisket or 10 all the same. And is really nice to have for fundraiser and charity stuff.
This sounds awesome. I’m going to do the backyard one first and eventually I’ll do a big one. That’s where I force DirtBall to do shit because he is 100x me at this shit. I’m good at giving it a go, drinking and other shit. but it’s fun as hell and the entire process is a great day.
Posted it in the stale kracker thread but this stuff is really good if you’re looking for a good Cajun seasoning salt other than Tony’s. The fire is better than the original.
My dad used to use it a long time ago and saw it in the store a while back and grabbed some for nostalgia. But it’s a solid rub.
Just wrapped these in foil. Added more seasoning to the foil and a whole stick of butter to the lemon pepper and half a stick to the standard BBQ ones.
https://www.the-mainboard.com/index.php?threads/stale-kracker-lets-get-it-dude.182283/ Great IG follow for Cajun cooking.
Holy shit, I would have never clicked on that thread if it weren't for this I love Cajun food and need to try my hand at more of it other than the once a year or so crayfish or shrimp boil
He’s great. His boils are legit especially with the setup he has, but all of his other stuff is great. Solid IG follow. I try to post some itt but there’s a lot of content Edit: his attempt at a brisket which is relevant to this thread.
So I just dug into this. Where are you getting Fresno peppers? Only place I am seeing them is Whole Foods.
Huy Fong Foods was located in the same city in which I went to high school. It's been on tables at Asian restaurants here since the late 80's. I'll always be loyal.
My man has good ideas. Actually my wife has been wanting to make birria tacos since before Christmas The recipe being posted here made me decide to do it today
Think I’m going to cook beef cheeks tomorrow. Never done them before and I’d like to serve them sliced. What temp should I pull them at?
