That pizza looks awesome. The real pro move here is the wire rack though. Makes a huge difference for those few minutes between coming out of the oven and eating.
My effort tonight. Dough from a little bakery in Chicago, pepperoni from Tempesta, and a 50/50 mozzarella provolone mix.
TMB pizza experts, please be my focus group for a bit. For those who have used them, do you prefer a pizza stone or pizza steel?
100% steel, especially if you are going to do multiple pizzas a night. I used a stone for years and they’d crack on me eventually. Plus the steel is great for holding thermal mass in the oven for other things and making bread on them.
Have you noticed that with steels you need to lower the temp to keep from burning the bottom before the top is done? In my day job im working on developing a product that has a pizza oven component, but early testing on the steels is not going the way I expected
I’ve had to adjust the height of the steel in my oven, almost all the way to the top because my undercarriage was done cooking before the top was getting enough color
yeah when i'm doing real thin crust i end up swapping to broil as i put it in to make sure top is appropriately caramelized
I keep it simple. Can of tomatoes, sea salt; cracked pepper, fresh garlic, fresh basil. Just run it through the Vitamix until desired consistency and away we go.
i've tried various sauces and nothing really beats good canned tomatoes with a little salt/sugar as needed i just hand crush usually, good pre-crushed are hard to come by here
I have a under oven broiler, so jealous of those top Broilers. depends on style I think. For NY style, can of crushed tomatoes and a little salt. For Neopolitan salt, olive oil, garlic and maybe some herbs. Detroit was a ton of shit including sugar, very sweet.
my last place it was under but had a little trap door to access end up laying on the ground to finish pizzas
can of whole peeled san marzano oregano, salt, pinch of sugar bring to boil and remove from heat. bring to boil again about 25 minutes later and remove from heat crushing with a wooden spoon occasionally when i walk by
I got drunk pizza at upside twice but they were low on supply. I will check it out next visit. I also really liked the pizza at Rubirosa.
Ok everyone is probably really really hyped for my top 11 after letting all that suspense build up over night. 11. Ace's Pizza My favorite detroit style za in town. And the only one that let's you play N64 while you wait. First pie served as the base line test and is a half pep half cheese with side of garlic butter. Second pie is their "pepper trio" with jalapenos, cherry peppers, green peppers, and sambal chili honey w ranch.
