Not ‘bbq’ but asked my wife to pick up a chuckie and she came home with a tri-tip. Whatever, didn’t have time to do sous vide so I put it in oven and finished reverse-sear on cast iron. It was pretty solid but the star of the show was a roasted tomatoes and mortar smashed pistachio sauce for some rigatoni. Wish I wasn’t drinking and wrote down everything I added. Was sublime (onion powder, Italian spices, garlic powder, salt & pepper, 2/3 cup of red wine; were the basics with fire roasted tomatoes from Trader Joe’s with 3-4 tablespoons of the pistachios added in. Easily a top 3 Italian sauce I’ve made and it didn’t marinate for more than 45 minutes)
Try baking powder in your seasoning. That helps crisp em up when smoking. Can also smoke them and then fire up the grill to like 450 for the last few minutes of cooking to help crisp em up.
True, but just stoke the coals or spread em out assuming he’s doing a dual zone cook. Should get the heat up enough for the last few mins.

Ok folks, be my focus group for just a bit. Forget dedicated smokers. Talking exclusively about grills, would you ever buy an electric grill? Or maybe the better question is, are there certain specs or features that could make you go that route?
I have one from an apartment that didn’t allow charcoal or gas. It’s fine, similar to propane/NG where it’s kind of grilled but not all the way to coal. The amount of power it takes to heat sucks, it makes an extension cord almost impossible, but it worked for what I needed. I’d never buy another if given other options though.
