On the Texas coast this weekend with family so I pulled some already smoked pork belly and roasted hatch chiles out of the freezer for a quick meal to make while down here. Pork belly tacos with roasted hatch & cotija. Obligatory mexican corn as well. Hit the spot after a day of beer & ocean.

frozen has browns (20 oz or so) let thaw and squeeze as much water as you can. Mix with 1/2 cup of cheeses and whatever seasoning you want. Mush into a spring pan after greasing. Make sure there is no space for filling. Freeze for 1 hour or more (I did this day before). when ready heat oven to 425 and bake for 15 minutes. Take out and fill with filling. filling I did 6 eggs, 1/2 cup for heavy cream, 2 tablespoons of butter, cup or cheese, bacon, sausage, green onion, and sautéed onion. bake at 350 until done around 40 minutes

Made some great burgers last night. Posting mostly because of the bun. First time making a Japanese style milk bread. So easy and turned out great.

It’s russet. Just par cooked it pretty hard to chase that crunch. Used some smoked paprika in the crust too.
yeah my crust wasn’t as done as I liked. Because well i actually didn’t cook it. I prepped everything the night before and let my MiL parbake and then throwing in filling while I was at church.
