Here are some courses from my dinner. Aperitif Truffle beef carpaccio Artichoke and sweetbreads Chicken like 6 ways came with gloves for the wing
Random: been making a ton of salmon lately as a meat market a block from my house has awesome fish. The skin every other time I had bought it was always well de-scaled but yesterday I absentmindedly forgot to check until it was already in the pan, and it wasn't de-scaled at all. The meat was still good but I was
Anyone try making a dry roux on the grill? I really like ATK's recipe, but it stinks my house up for days in the oven
Effing around in the kitchen today. Pork belly tacos, posole verde, pinto beans, elotes. A lot of it already done but still relaxing and fun.
I’m in DC and just finished up at Cranes which has a Michelin star. Duck Rillette Gyoza Squid with Spanish chorizo, lentils, rice noodles in a sake sauce Everything was very good. Only thing I can complain about was how the lentils and chorizo weren’t really mixed into the plate and was on one side or the other
Homemade Big Mac Burger sauce, shredded lettuce, shaved onion, burger with American, and chopped pickles
Bacon cheeseburger with sharp cheddar. Corn, grape tomato, and avacado salad with feta, and lemon-basil vinaigrette.
Sweet and hot Italian, green bell, sweet onion, black olives, and fresh basil. Heirloom sauce and garlic parm crust.
My wife made kufta and hummus from scratch for dinner and it was one of the best things I’ve out in my face in recent memory.
Kept having trouble with smash burgers sticking to the press. Not sure why it took so long to use parchment paper between the press and meat but it worked. Onions, Colby Jack, lettuce and tomato, burger sauce and ketchup
yep. turns out that was a photo of grilled potatoes. hadn’t tried that before, and i enjoyed them. I take it you’re not a fan?
Made me laugh because it was a whole thing on Top Chef this season about how you don't grill potatoes.
Not mine, I just used pictures from the site but it is a nice little idea. It’s like a fire pit. Not too big and seems pretty useful not the best look in a yard though
It’s a huge movement here to copy southern bbq and smoking. Rubs, sauces and bbqs are really popular right now
I think the concept is great. The quality looks like it would warp and start oxidizing badly after about 5 uses.
Outstanding. I am guessing pickled red onions, avocado cream sauce, cotija, and salsa fresco? Although the salsa looks like it could have a tinge of peach or habanero about it.
you nailed it. nothing special about the salsa. Charred a tomato, onion, red pepper and jalapeño and threw it in the blender.
i too did burgers tonight. Buns are home made, decided to experiment this weekend and make some, they were delightful. Little charred red onion, my own burger sauce (4 parts mayo, 1 part ketchup, and a small shot of yellow mustard, chopped grillled onions, pickles, Worcestershire sauce and a home made spice blend), shredded lettuce and tomatoes.
