Costco had tomahawk steak’s and shrimp on sale today, so we did a quick and easy surf and turf. No finished picture, but it was delicious
Smoke chicken posole, smoked pork belly tacos, charred ribeye pinto beans, & elotes going down tonight. Also have some roasted hatch chiles. The smoking was all done 6-12 months ago but the meal will still be sublime.
And don’t ask about all the chili powder on my plate, don’t want to talk about the shaker lid not being on secure when I went to sprinkle some on my elotes…
Nah, hosting on of me bff’s who moved to NWA and was back in town visiting us this weekend. 4 adults and 2 toddlers. Posole gone, elotes gone, enough pork belly left for maybe 2 tacos in the morning, and a helping of beans left.
Got a 7.5lb pork butt going onto the smoker at midnight. Been a fucking struggle to stay awake after getting up at 5a to go fishing.
At 158 now. Bark isn't where I want it before I wrap, but not too surprising since it was 33 outside and the smoker was probably running at 200-210. Might bump the heat up to 250 and see if I can get a bit more color on it
My Workhorse offset is apparently done. I hope they make a better pit than they do communicate because the latter has been horrific. My production date was in the first week of April. That week came and went. I reached out in mid-April and was told the pit was in production and that I would get an email the next week when it was done. That next week also came and went with no communication. Emailed again the first week of May and got a reply that the smoker was finished and I would be contacted for a delivery date. Three weeks go by and no communication. I email again on 5/20 and was told I’m slated for delivery this week. Surprise, surprise…nothing. I just emailed again today in hopes of getting delivery before the weekend. What started as sympathy for a small business with growing pains has turned into annoyance at a complete lack of communication. The customer service has been fine, but I shouldn’t have to badger a company to get my $3000 product delivered. This stupid fucking thing better turn me into a.tramp minus the bananas opinion about wings.
Got a response… “We may be able to get you delivered by the weekend. I will reach back out in 24 hours with details.” Translation… “LOL see you mid-June after six more email exchanges”
What is the price difference normally between Choice and Prime? I went to Costco today to get a prime and it was $3.99 lb but they were all out. I can get choice for $2.97 at Kroger. Wondering what normally the price difference is in the two.
Sexy af. Can’t wait for mine to be here this summer. I expect you to smoke meats for the next 3 days 24/7. Just watched a Mad Scientist video where he said the Workhorse is incredible.
I’ve got 3 racks of spares and 2 5lb butts on deck for the weekend. Depending on when the heart attack comes, I might try to fit in another cook.
