All the pics of food I got last night. We had some more. Wasn't anything too elaborate. Went with meatchurch holy voodoo rub on the wings then finished 1/2 with an Asian chili sauce and the other 1/2 with Stubbs sticky sweet bbq sauce. Also had deer sausage with jalepeno and cheddar and boudin.

For Saturday, 160 smoked chicken wings, 80 smoked jalapeño poppers, and 2 large batches of smoked queso. Have I mentioned I have never smoked chicken wings in my life? What could possibly go wrong?
Gonna be feeding 40 people with some pulled pork for a baby shower in a couple weeks. Done some research and think I’m gonna need about 25lbs of raw pork. Am i off or does that sound correct. I’ll hang up and listen.

Are you only serving that? For a similar-sized baby shower I smoked 14-15 lbs raw but also did smoked chicken. There was plenty leftover from 30-40 people.
Yes. Scott’s is his parents’ place. It’s a different restaurant altogether. The original Dreamland is not the same as the chain, either. It’s a totally different menu.

He’s bringing a couple racks of ribs from a local place in Nashville and we’re going to the lake drink a bunch of beer, watch a ton of football, and eat bbq. Going to try to cast a few lines, too. Got the sous vide packed for reheating bbq, and the air fryer for reheating the wings
Tryin out some honey/chili oil chicken wings. Putting em on the smoke first, finishing with a quick fry and then glaze.
I've literally bought 5 variations of chili sauce/oil since making my first batch of raspberry lemonade chili sauce wings I loved it so much I'm gonna try and make it even better
Glaze was heated up at the end and then tossed the wings with it. We used the momofuku chili crunch for the chili oil part of that. It worked out well. Substituted Gochukaru Flakes with Aleppo. It was delicious. I'd pry pull back on the cayenne a little bit but I may have been heavy handed, at least if I was using the same chili oil again. Some intense flavors, awesome. Spoiler Seasoning: 2 tbsp Brown Sugar 1.5 tbsp Kosher Salt 1 tbsp Smoked Paprika ½ tbsp Onion Powder ½ tbsp Granulated Garlic ½ tbsp Gochukaru Flakes 2 tsp Ground Cumin 2 tsp Black Pepper 1.5 tsp Cayenne Powder Honey Chili Glaze: 2.5 tbsp Chili Oil 2.5 tbsp Honey 1.5 tbsp Minced Garlic ¾ tsp Sesame Seeds
i can but it’s was the first “soup weather” of the season so we ordered pho in my mind i knew i could go from 3-4 hours of the shootout to painting a project for the wife to grilling so basically a day full of booze
About to smoke some bacon I cured this week. Also brining some chicken thighs in Sichuan spicy hot pot soup base.
Did a rack of ribs in a ham brine for 24 hrs (regular brine but added Prague powder) seasoned with salt pepper and garlic and now in the smoke. I have no idea how this is going to work.
