Honestly, if you did *true* small town bar cooking, correctly, in Portland it would slap.

One of the iconic places in the metro is in a small area outside of town with huge portions on a flattop and the ceiling was literally hats, just hundreds to thousands of hats like bars you see with dollar bills attached and they served an amazing burger and fries.

Those that are intimidated with Oregon haven’t really experienced it. It’s got a ton of racist, the better part of it became liberal as fuck, pbr is consumed with the understanding that better shit (in any capacity) is also available and you enjoy that when you can.

Food carts are abundant because they give young chefs a chance to actually do their thing.

You ABSOLUTELY get the weird, and it’s awesome because most of the weird is a different perspective. Those that suck and are racist are usually shunned to the outskirts at this time (and they still exist, absolutely) and it’s a place where a guy like Damian Lillard can lead a march that fills a bridge full of people to stand up for BLM.

In an ideal world you take the best of a diversified community (omaha is more diversified, but way more segregated), the oregon mindset, and the love of the environment and you start anew.

 

Also tldr:

If it’s done well, it will work. One of best restaurants in the United States is a Russian food restaurant in Portland.

Portland doesn’t give a shit about the style of the food, just do it well.
