    It originated at Oklahoma Joes in KC. Place has been renamed Joes Kansas City BBQ but OGs don’t forget. Had been named the best sandwich in the US by Zagat at one point. I used to live .5 miles from the place back in my KC days.

    Pappys is good for ribs, not much else. They have a p good fried chicken place in the same building called Southern.

    best overall q is salt and smoke, then probably sugarfire. Sugarfire has a sister restaurant burger spot called hi pointe drive in too.

    What part of town are you staying in? Perennial on Lockwood in Webster Groves is great for a little nicer brewery/dinner type setup. fast casual Seoul taco is great, Korean style burritos and tacos. I love Indo, which is kind of an upscale sushi and Asian fusion type spot and was a James beard semi-finalist. Feel free to dm with any other q’s

    So this plan got pretty much jettisoned into the sun. Got 3 hours of sleep last night tending to a toddler with 102-103 fever. Confirmed virus and ear infection. Have to call off the gathering.

    Going to move forward with clod, skirt, and pork belly along with pinto beans. Go ahead and portion them and bust them out later. Will put ribs in freezer and thaw them to smoke for the occasion.

    Still a lot of smoking, just at a more leisurely pace.

    Using my Horizon offset for all. My Oklahoma Joe, which would be more suited to this run as it is larger diameter, is on the IR. Firebox finally rusted through so need to cut it off and attach another.

    In other news, stopped my my wood plug and it had vanished. After 50 years, the guy called it quits. He had the largest selection of cooking woods I have ever seen and was super close. Now I am left with options that only have half the inventory and are not really that close at all. I am freaking out a little.

    Prices range wildly on offsets due to material and build quality so knowing your usage plans (amount and frequency) along with perceived budget will go a lonnnnnng way in the group steering you in the right direction.

    I grill about every weekend. Recently learned pellet smokers aren’t for me.

    I understand I need a large firebox and I want the heavier material.

    I have no price range for reference.

    So sounds like you just need to research builders local to your area. You want heavy duty and quality for pretty regular usage. Getting something local and well built will be a better bang for your buck than buying something and having it shipped. You will most likely be in the $1500-$2500 range for a regular usage smoker that gets used frequently and can as easily make bbq for 2 as it can for 50.

    If you are living in the area of your fandom I would not imagine it would be tough at all to find multiple good options.

    Edit: Tell us state of residence and we should be able to give you some good options.
