I don't do it tp prevent it drying out. It adds flavor to an otherwise large cut of meat with not a lot of flavor.
The good news is that I secured some nice beef ribs to smoke tomorrow. Bad news is shitty weather tomorrow. I can do cold and rainy but high winds really really fuck with my tent game.

Wings in the marinade, will be firing up the pit in a few going simple for the SB, sausage from Longhorn Meats, wings, smoked onions and veggies for that onion dip from earlier ITT and some salsa may do a loaf of bread in the dutch oven, but aint gotten motivated to get it started this morning yet SB is finger food/snack all day round here and I am still LOL'n at $10/lb for brisket thats more than prime wagyu
two bone-out polk butts on the smoke hopefully they dont suck ass it will certainly be better than the microwaved meat they make up in the northeast though, so whatever
cooking up some beer butt chicken today also excited that I finally got my pit gloves and some claw shredders for pork made some great butt last week on the BGE
up to 115 internal got some boiled peanuts in the crockpot and iced down the cooler time to open a beer

Great advice on seasoning the Akorn, appreciated. Went 4 hours with the last half hour bumped up to 500. Little bit further than I wanted, but the gasket seems to be working well. Got two spare ribs and burgers smoking now. Holding at 250 beautifully. Love this so much more than the water smoker I've been rocking for years.
I go 225-250 and usually takes ~4 hours, give or take. Start checking around 3.5 to see how they are doing.

pro-tip, slap it with just the tip and if it imprints it is done. if it recoils and thumps your belly, keep smoking.
been at 152ish for an hour... got 3+ hours of cook time left before game but damn if im not itchin to wrap already does flipping the butt help the stall?
I flip the butt because the earthward side never gets the bark settled as well when I leave it one direction the whole time. I have no clue on helping the stall though.
Here I go talking about how I don't really like butts and the one I cooked yesterday was one of the best things I've cooked on the egg. Brunswick stew in the pot, pulled pork stuffed jalepeno's in the fridge waiting on the 80 wings that are currently on the egg to finish.

vertical chicken done brown sugar based rub along with a mix of other rubs including some 4 rivers stuff...in the can, I used a blue moon gingerbread spiced ale mixed with grape juice...hickory and maple chips, slow cooked a bit to get more smoke flavor, juicy as hell at the end...threw on some biscuits and corn on the cob to go with it
Just pulled the test pieces of goose off. In a shocking turn of events its really fucking good. Tastes almost like a tender jerky. Wings just went on.
For the second year in a row my group of friends has rented out the upstairs of a bar to watch the Super Bowl. Last year was fun, but the number of females sitting in prime football game viewing spots and squawking about non Super Bowl things was approaching critical mass. Just found out we are expecting twice as many people this year, at least 70. Looks like I may be bailing first quarter and having an excuse to BBQ something after all. Second half power smoked chicken thighs sound nice.
