Was talking about this with someone the other day. Really tough one but to me I think it's Varys. A guy who we still know so little about is potentially/probably one of the most powerful people in in the entire series. Hardly anyone knows how much power he has because that's the way he wants it. Not to mention that no one is entirely sure what side of the fence he's on.
Not sure there is an answer but for me its the Tywin-Jaime-Cersei-Tyrion family saga. They're so fucked up i can't help but be interested.

I don't consider any POV characters that interesting outside of Tyrion and Bran tbh although I'm sure it's because I've seen their thought process. I like the mystery behind Bloodraven and Oberyn and Tywin to a lesser degree. They've seen some shit.
Rhaegar Targaryen - Not even alive for the series proper, still the most interesting character. I love to think that he really was the Prince that was Promised but he died and now there is no hero
The two book characters I would love to get full origin stories on are Bloodraven and Quaithe. Figuring out how BR went from Night's Watch commander to Weirwood net member/slave/orchestrator has to be interesting. I doubt some CotF randomly walked up to him and was like, "Hey, wanna see some shit?" Then Quaithe is just full of questions. Does she have a glass candle? Who does she communicate with? What's her objective? Sooo many questions.

I want to to say Lady Stonehart, but i'm kinda disappointed in how she was used in the books and its prob why she wasn't included in show. Thought she'd be way interesting, but the most interesting thing about her is just that she happened.
I really get interested in the old Varys / Littlefinger interactions, as well as their stories individually. Don't know if that makes them "most interesting" to me, but hey.
Tywin is probably the most interesting main character to me, but I've always wanted to hear more about the Smiling Knight. He was supposedly the Mountain of his time, half the size but twice as mad, and he rode with the Kingswood Brotherhood who are interesting on their own. Ulmer the only surviving member of the Brotherhood is pretty interesting too, he has been with the NW for years surviving the Fist, Crasters Keep, and the Wildling attack.
Arya has the most interesting character arc to me, and hers is the best that epitomizes the theme of the entire story. That said, most interesting chapters to read are Tyrion's. Most interesting non-POV is Varys.
She became more interesting to me last night after finding out she's hundreds of years old. I can't remember so well because its been years since I last read, but I recall in her POV chapter she was doubting her own powers, and in the show she's all "aw shucks most of my magic is just stupid tricks" to Selise. and then, oh yeah by the way, she's been using magic to change her appearance for hundreds of years.
The one guy from the books that I'm kind of salty has never made it into the show is Wyman Manderly. That fat bastard pulled off some devious maneuvers and delivers one of my favorite paragraphs in the books. “Foes and false friends are all around me, Lord Davos. They infest my city like roaches, and at night I feel them crawling over me.” The fat man’s fingers coiled into a fist, and all his chins trembled. “My son Wendel came to the Twins a guest. He ate Lord Walder’s bread and salt, and hung his sword upon the wall to feast with his friends. And they murdered him. Murdered, I say, and may the Freys choke upon their fables. I drink with Jared, jape with Symond, promise Rhaegar the hand of my own beloved granddaughter…but never think that means I have forgotten. The north remembers, Lord Davos. The north remembers, and the mummer’s farce is almost done. My son is home.”
Nah, George says Wyman is not part of the show through S6. Maybe they introduce him next season, but I doubt it. Wendell was in the show for the RW episode, but did not have any lines.
They really did fuck the show up, so many of my favorite things were cut. The first season and book were almost exactly the same, and it was amazing.
The first season was basically just Lannisters and Starks with KL/Dany/Winterfell/Castle Black as your locations, so adapting that to the screen was doable. From there all the Starks and Lannisters went their separate ways and dozens more major characters/locations were introduced. It's impossible to adapt that to the screen without cutting tons of stuff. The show writers have laid some eggs, but for the most part they've done an amazing job staying as close to the books as they have. Book readers will never be happy with the show, and that's fine, but they didn't fuck it up. It's the most successful HBO show of all time.
I guess fucking it up wasn't really what I meant, I still enjoy it. It just could have been more enjoyable.
I believe there will eventually be like a 4-5 part movie series that includes any and everything including the dreams and such. And by believe I mean hope
Game of Thrones could become another Star Trek, with spinoffs, movies, shows all coming out all the time -- if GRRM allowed it.
