It’s always the hottest months that I want to shuck in the shade with a lite beer and a nice breeze off the ocean or bay. If I go out this way, so be it.
I’ll eat them anytime as long as they are from a decent restaurant or seafood market. Refrigeration and the ability to ship in oysters from areas with colder water makes the R month thing outdated in most cases.
The R month thing isn’t the best rule. May is safer to eat them because waters are still warming up (usually) and September isn’t the best bc waters are still hot from summer. If they are farm raised or from the northwest or northeast I’ll eat them all year long.

it's about spoilage/food safety not taste, but it's mostly safe year round now due to oyster farming and enhanced safety protocols/keeping them iced.
Actually had a friend who talked me out of it and a month later there was some kind of issue with Oysters. She was correct in her assessment.
I've decided if food takes me out then so be it. I'm not gonna worry too much about it. Like airplanes or roller coasters. You only yolo once and all that
Bought a bushel for a June fishing tournament. Never again. Got sick as shit out of both ends for like 24 hours and had the shits for almost a week
Eat cold water oysters (which are better IMO GBR NFM) and don't worry bout it I enjoy Gulf oysters, but they're clearly inferior to PNW and NE ostras. Baja California has amazing ones, too, and I'll eat those year round
