Yea just recently got it. I'm a fan. I mainly bought it to use as a container to rub stuff down without making a mess and to marinate shit. I didn't realize it had a cutting board in it and I didn't realize it did this: Basically there's 3 levels that pop out. I used the high one when rubbing it and the 2nd one was in the video when I sliced it. If you pop it back up to the 3rd, the juice goes back onto the board. Then you can make it lay flat for storage. Pretty nifty thing and has a lid if you want to marinate or let something sit with rub for a while.

Go to your cheapest Mexican grocery store, buy some dried peppers, oregano, and cinnamon. Bloom the peppers in hot water, grind them up into a paste, throw in oregano and a cinnamon stick, add whatever you want, maybe salt, won’t need a lot. Marinade overnight in a zip lock bag.
idk who this guy is, but he's absolutely correct about the groupthink in bbq and specifically on both of the topics he steps out on there. the calling out Franklin is whatever, they've made their name and it pops, but he's very correct in there are tons of things that are done in bbq accepted all over the place that make no sense culinarily. also at the end of the day if your food tastes great, the "rules" go out the window.

He’s one of the stoner owners of Goldee’s (the #1 bbq spot on Texas Monthly). He’s got a good pedigree (including a few years at Franklin) and has been peeling back the secret bbq onion for the last year or two. As a former stoner and current bbq guy, I like it.
To add to the bbq drama, Jirby claims to have spilled the tallow beans like last year and Mad Scientist ran with it (and got bbq YouTube famous from it…gunslinger mentality?). Jirby talked mad Mad Scientist shit for a while but is apparently trying to get a collab going. I learned this watching a recent stream putting my kids to bed. I can’t believe I know this and just typed it out.
