    To be clear, I’m not “complaining”. I’m laughing at a cheat code that saves maybe a few seconds, but leads to extra dishes in the back end. All for something that takes no effort at all

    Anyone watching BBQ USA on Food? Basically Simon goes to big regional BBQ competitions. He’s been to KC, GA and Texas.

    Rules are wonky, but interesting to see how they prepare for the tables and some shit that they do.

    Disclaimer: Never been to a BBQ competition in my life so it’s all new to me. Lots of barrels.

    I've watched the TX one so far
    It was pretty accurate as to what I've seen in the few cook-offs I've done

    Barrels seem to be the dominant thing in competition right now.
    Smokey flavor of an offset is apparently out, and baking on a sweet layer of sauce is in.
    Shit ebbs and flows in competition

    this would drive me crazy. Subjective competition is rough.

    I thought overall the show is awkward. Always like Michael Simon but here he looks 80 years old trying to be friends with randos. And there isn’t anything to learn

    I agree, no idea how they sustain this even one season. Only thing of value I took was what they do for the judges. Not all that helpful because I’m not doing that shit at home. I’ll still watch for some nuggets though.

    Only worth it if you're in or near Tuscaloosa to go to the original. Not worth the trip if your in Bham with better options (Saws among others)

    Barrels are just so damn easy and you don't really sacrifice on flavor.

    it does suck how comps are so dependent on judges tastes, which can obviously change.

    Like others have said, the original is good but less so for the chains. I do love their sauce though and always pick up a bottle when I go. One of my all time favorites

    The tree will be cut into 18” rounds. I have to bring it from the neighbors yard and stack it on my racks. Fun little activity with the kids.

    So, not only is it free, it’s bonding time with my children, my man.

    I own a log splitter.

    I will leave the rounds until next year and probably split them in the spring. I’ve been through almost a face cord in two months with the offset but have about a cord left. That should last me until this oak is ready.

    Update on my cook wood…

    Tree company left the trees in 5-6’ lengths (so they can sell it I guess). I’m not breaking down 30” diameter logs. My 18 incher wouldn’t stand a chance :(

    Back on the hunt.

    Can you contact the tree company and ask em how much they would charge you to cut em to 18" lengths and stack em at your house?
    Might be cheaper for them than loading and hauling

    Honestly, I’m not paying very much for that when I can get cut rounds almost every week. I’m just biding my time until something pops up within a few miles. Living in a city, most of the big stuff is 15-20 miles away. But every once in a while I get some felled oak/hickory cut up within a few minutes.

    It’s a fun hobby.

    Got up at 2:30 and started trimming a brisket. Got it on the smoker around 4 with two pork butts. We're having a departmental dinner at work this evening, so I volunteered. I'm starting to regret that as the liter or so of coffee I've consumed so far has begun to wear off.

    So far, seems okay (knock on wood). Butts temped just now at 175 and the brisket around 170.
