I dont live 'on' the lake, but directly across the street from it I'm so loving raising a boy at the lake. He absolutely loves fishing at 8, has for 5 years or more. Already has his own kayak, and can wear me out trying to keep up with him. Has his own fishing boat, a 14 foot aluminum hull we are working on rebuilding together. Greatest place to raise a boy, imo Ohh, and he is 100% all about bbq. Wants to eat it every time we are out, and wants to help me and learn and taste test with me every time we cook at home

Do you vacuum seal and freeze after it’s done smoking or do you vacuum seal and refrigerate? Do you pull them before you seal or leave whole?
Most the time I freeze but this is such a small turnaround time I will just refrigerate. I leave intact and do the slicing/chopping/pulling for when it is ready to be served.
