What’s the point that the fat renders first and then the skin gets crispy at the end? Just throw some baking powder in the seasoning mix instead and make sure the wings are dry. Only needs 30 mins or so at 350. But you pellet grill guys do you.
Have not smoked anything in almost a month after having to move out for a few weeks for our tile to be replaced. Getting back to it with some ribs tonight.
The Masterbuilt Gravity finally died enough to get me to give up on the stupid thing. Time to go grill shopping. Weber Searwood, RecTec or something else? While I liked the Gravity flavor, I need something that's less work to manage work, a 1 year old and school while still being able to grill. I'll hang up and listen now.

just put on a pork butt for smoked, then braised carnitas. also making refried beans from some Rancho Gordo pintos. pics to come, unless i get too drunk.
Progress. Getting close to braising time, so I added the pork to the foil pan a moment ago. Mainly to add a hint of smoke to the lard. Last pic is a homebrewed Czech Pilsner, which is delightful. And 7.3% abv.
yeah, I did a triple decoction mash (in layman's terms, long, complicated process) and it turns out, it made the whole grain starch to sugar conversion much more efficient than my usual process. oh well. also, to add to the danger, it doesn't taste remotely as strong as it is
