Same, I really like my Rec Teq. That new one is the first I’ve seen other than the Yoder when you replace the grates over the fire pot that can actually get the real flame sear but this one looks like the grates open automatically which would be awesome. I’d be buying that new RT if I didn’t have one already.
My buddy convinced me to try tri tip like a brisket so doing that tomorrow. As a Californian that loves some tri tip Santa Maria style or reverse seared I’m not sure how sacrilegious this is going to be.
The tri tip I bought looked pretty marbled for a tri tip, so let’s see what happens. Still skeptical.

Cooked faster than I expected as dome temp was 250 and then it jumped when I put back on after wrapping to 300. Total cook time was around 3:45 mins and pulled it when it was wrapped around 205. Didn’t get a big smoke ring like I wanted. Overall it was solid and something different to try. Definitely cheaper and faster than a brisket. My buddy liked it and thought it was kind of like brisket. Would I do it again and make some adjustments, yes.
Edit addon: Next time I have a few people over I'll try both versions, one being a reverse sear and this brisket style and see how everybody likes it.

That's your offset right? How do you set it up for cold smoke? I saw Bradley Robinson used a pellet tube inside his pellet smoker (that was not running) to cold smoke some sausage.
