Super late posting this. Did this a couple weeks ago via the advice from a.tramp Got paella pan last year for wedding shower gift. Finally broke it out. Paella mixta. Subbed mussels for double chorizo. Next time will probably put in mussels and sub chorizo for rabbit.
Absolutely it was a blast to make! Looking forward to trying it again. I will say that saffron is damn expensive! But definitely worth it!
