I have a vinegar sauce that's unopened that I bought over 2 years ago in SC. It's been in the fridge the whole time but I assume it's not good at this point.
If its really strong vinegar its probably still fine had it sat unrefrigerated, in the fridge should be no worries

Accompanied by ribs (see below) Smoke ring Clean bone Pulled Beef ribs turned out ok. Had to pull them off the smoker earlier than I wanted (it was at 196). Next time I'll just start then earlier, but I desperately needed sleep this morning and let them go for 7 hours, which was just short of what was needed eventually. Anyway... The finish product photographed well (and did taste amazing. Just not quite the texture I was going for)
Picked up a Fireboard for a new thermometer. Really like it so far. Has WiFi, BT, 6 probe ports, battery powered and stores your data from past cooks. No pictures of the food both because I suck and because I took too long to cut the grass and it was a mad scramble to get the sides done and the meat out for guests. But here's a picture from the app when the brisket finished. Brisket was on the top rack so it was probably cooking ~10-15 degrees hotter than where the probe was. Spoiler

Grabbed this up a couple weekends ago. Gonna throw some ribs and wings on there for the game later. Had an issue the first day and the customer service for this company is great. The hopper quit randomly and they sent a new one along with a bag of pellets.

How big of an offset are you looking to purchase? I bought a 60" pit from a company called Black Warrior Smokers here in AL. It's comparable quality to Lang at a third of the cost.
i dont know if lang makes smokers with direct grill options currently, but when i was first reading up on yoders some people preferred them because you have that capability with some of their models if you so choose.
looking at the 60" deluxe from Lang, would like to find something closer to Iowa, but would drive to GA to get it, not that big of a deal
http://www.blackwarriorsmokers.com/models_apache.html This is what I have but I swapped the warmer box for 1/4" steel throughout the smoker. looks like it's about half the price of the Lang, but it come with two full rack as opposed to the partial top rack in the Lang. Also comes with a propane deck on the back if you want to cook, braise, fry, boil anything in addition to smoking.
It's closer to you than Lang, which is about an hr west of Savannah. That place is an hr north of Birmingham.
