A buddy of mine that has parents with entirely too much money bought a cabinet smoker from a local custom shop about 2 years ago. He used it half a dozen times but said it's just in the way now bc he uses his 3 BGE's all the time. He offered to bring it to me to get rid of it. It was a $2500 rig when he bought it. No clue what I'll do with it but no way I was turning it down. There's another rack hanging on the fence behind it.
He's a great guy but it's laughable how many toys he has. To say I'm jealous of his setup would be an understatement. He has a covered area in his backyard with an industrial AC unit in the middle that cools it. Non save situation lol Actually the house itself is pretty average. It's the backyard that's absurd. The huge outdoor space sits next to a very nice pool. He said they scaled down on house so they could have an adult playground for a backyard. They have people over damn near every weekend during the summer.
Anyone ever make piri piri chicken? There was a recipe for it in a magazine at my dad's place that looked awesome and I've been meaning to try. He made it today and sent me some pictures, I need to do it soon
Yes. I made some sauce last summer with the Thai dragon peppers I grew. It's really good as a chicken marinade, reserve some for a dipping sauce, and served with grilled veggies. From what I recall the recipe used a lot of ingredients, but it turned out well.
My mom and dad took my oldest son for the weekend and on their way home (they live 2 hours away) they said they'd pay for some BBQ and they wanted ribs. So we smoked some babybacks today. Dear gold it was amazing. I did the DIY meatmead memphis dust with brown suger, butter, and honey put on after three hours of smoke. Best ribs I've ever done. Here's a pick before we cut into them
Good ol' fashion grilling on a Sunday. Just liked the finished look of this one and thought I would share. Costco choice ribeyes might just be the best value on the market. The lady and I split one along with some bacon sauteed brussels and a boxed pilaf.
While a little done for my liking, that's a damned fine looking steak. You can tell it's well rested, too.

I never buy ribeyes because i feel like you have to cut through a ton of fat to get to the real meat and you don't get enough meat.
Press about 6 cloves garlic, rub meat thoroughly with garlic. Generously coat with coarse kosher and course ground pepper with a dash of paprika and rosemary. Smoke between 150-200 degrees until internal temp of 115-125 is reached depending on if you want it rare-medium (this one was done to 120 and finished at medium rare-medium) Move over open flame and sear. Let rest for 30 minutes. Enjoy.
