Maverick xr40 is the newest 2 probe I've got the xr50, the 4 probe version Maverick is better than any of the other crap shooting you can find on Amazon The range of their wireless is flat out astounding, compared to any other option
My most used BGE accessories are my Flame Boss 400, ash collector, electric blower/starter (definitely don’t need this though), dual probe wireless thermometer, and rib rack. Cast iron pans and Dutch oven are nice as well
Rib method: 1. Put ribs on 2. Drink your face off 3. Take ribs off when you feel they are probably done 4. For better or worse consume ribs
3-2-1 has never failed me yet. Foil is a pain in the ass. Also I’m going to try the slap on grill and drink method sometime soon.
I did side by side unwrapped then 321 and I liked the wrapped 321 better. That might have been baby backs, tho
My super technical rib cooking technique: - Cook ribs unwrapped until the bark is formed. Usually about 3-4 hours. - Wrap ribs with whatever junk (sugar, butter, sauce, nothing) I want to put in the foil. Usually about an hour. - Sauce ribs and let them cook unwrapped until the sauce is set. Usually about an hour. Bend test usually ‘passes’ after they come out of the foil, but I like the ribs to firm up a little at the end.

It’s annoying as hell to me that I can do a decent brisket but pork ribs are my Achilles. Might start temping the ribs. Going to try the 3-4 unwrapped followed by saucing/wrapping method next as 3-2-1 hasn’t gotten me the results I wanted so far

mine have ended up being done between 5 and 5.5 hrs This is more or less what I do. I just pull them when I know they're done. Essentially a slightly modified 3-2-1. I don't think I've gone a full hour at the end.
And aluminum foil. I get a standard duty and heavy duty roll and that will last over a year between house and smoker use.

321 method is cool and good if you're going to invite a party of guests that are lacking teeth. I am cheap and get foil pans at Dollar Tree.
