    Picked up a tomahawk and some short ribs for the weekend at the butcher. Asked about brisket, they had one, almost 19#. Fucker was $9 a lb. 172 total. I Yao faced my way past that. The butcher told me price should start dropping as soon as next week.

    I smoked some ribs at 275 a few weeks ago and they came out a little burnt in spots, but I guess with a brisket that’s a good thing. Haven’t smoked a brisket in over a decade.

    First full brisket ever going on tonight. Just got a a 15lb at $5.29/lb at Costco. Not bad, pumped to do one in my RECTEC.

    I’m doing fajitas on the egg tonight, and want to cook the shrimp in the iron skillet on the egg. Do I need to bring the temp way up to heat it up? My plan is to do the shrimp while the steak rests.

    To those of you with eggs, how much do you fill the drum with charcoal on a long smoke? I’ve yet to figure it out.

    Rockwood all natural. I guess I should have clarified, what is “full”. I have a charcoal basket and have filled that up, and struggle to get through a long smoke. I’m starting to think I need to fill it more.

    For a long smoke, I go through my coals to make sure I get plenty of big pieces mixed in, especially at the bottom of the basket. Maybe fill to 125% if you’ve had some issues with long smokes. I’m still figuring it out too, probably the biggest learning curve for me thus far.

    What temp would you guys suggest to have them on indirect heat? Think I went 250-300 last time

    I try to keep mine between 225-275. If you hit 300, it’s not going to hurt anything though.
