Buddy just got a Rec Tec bullseye so we broke it in with wings, smoked spam, and bacon wrapped Oreos this afternoon. Will be purchasing a Rec Tec next summer.
They are different, but I enjoyed them. Similar to a deep fried Oreo. Did one without rub and one with The Gospel.
Smoking some country style pork ribs marinaded in a sauce inspired by one used by a.tramp featuring guajillo, pasilla, and ancho chiles. It’s going into a posole roja I’m making tomorrow (which tramp has previously perfected). texasraider

Looking to mix up my wing game on the kettle tomorrow. Anyone used corn starch or baking powder to get more of a “fried” texture to your wings? I’ve used baking powder on wings made in the oven :ducks: (prior to grill/smoker), and they actually turned out really well. Wondered if people have done this on a traditional kettle before
I have used baking powder It makes for a good crisp skin Seems to work best if you are banking the coals and cooking the wings 100% on the cooler side
I usually bank mine. I’ve seen people use a vortex before and I’d love to pick one of those up to try. I ended up just doing baking powder on half today, will try corn starch another time.
Last time I did wings I stuck them under the broiler for a minute or so after taking them off the smoke. Crisped the skin up nicely.
Making poor mans bbq burnt ends with a chuck roast. I got a little distracted during the Wvu game and that’s why you’ll see a fresh new batch of charcoals, had to reload at half
