Just picked up 1 prime packer, 2 choice packers, 2 butts, beef cheeks, pork spare ribs, and I ain’t done yet. It might be lit this weekend.
i am going to try smoked ones again. My first attempt was great taste but just okay texture. I am going to trim these more along with being more patient on the cook and keep fingers crossed for better results.
Fuck that, I am going to smoke for 2-3 hours and then sous vide for 6 hours. These fuckers are going to be smoky and mouth melting tender.
I smoked em for a few hours then slow braised in the oven kinda like psb (just no peppers or onions) It was really good, but damn it took forever and wasn't much meat I think the 5lb package from sams was like 2 lbs after trimming and less after cooking
Let me tell you guys something, a Costco business just opened up closer to me than the regular Costco and I ain’t never looking back. The meat selection is ridiculous and the foot traffic is so much less. In and out in 20 minutes. I have set in line longer than that at the regular Costco.
It is a Costco but geared more towards business customers but can still be accessed by a regular Costco membership. ice maker, why not? Commercial range, fuck it. Wagyu packers for under $100, sure I am feeling fancy.
What is a line at a large box store? I just scan & go at Sam's, load up the cart, scan as I go along on the app, then swipe to pay and out the door.
