Yes, put some liquid in there and cover it up for a few hours. You can even increase temps quite a bit, but make sure you watch the liquid if you are going hot.
I’d go with the bigger grill but leave the pellet deal alone. The Rec Tec pellet mix is gross imo. Made my food taste like hot dog
I don’t understand the “pellet grills aren’t real smokers” thing Are they as good as a dedicated offset? Not really Can you make great smoked meat on a pellet grill? Absolutely as with anything, It’s more the cook, not what it’s cooked on *just my opinion as I have both. hell, I’ve smoked meat on my Weber gas grill with a smoke tube and it was really good (this was before I got the rectec and was out of wood for the offset)

They aren't cheap but for 2k it looks like it would legit last forever as opposed to my old wood table that was $700 I think and is on its last leg after 7 years and that is with me sanding/staining it several times.

A buddy built one himself using some 4x4s for the legs with a plywood top. I bet its worth five times what he spent in materials now with the new prices for lumber.
KJ built in and a fridge on the other side. Should have 3-4 seats at the bar and then 1 on each side. My garage is on the opposite side so I’ll put a TV up there with an accent wall. Going to put some planters around with mini Cyprus trees for privacy. Doing a little more landscaping on stuff you can’t see. I bought it where they pulled a bunch of shitty trees out and made it look decent enough to sell.

Yesterday I had a corned beef (small point) that needed to be cooked so I fired up the recteq. I ground up the spice packet that came with the it and used that as the rub. Later, while at the grocery store, I happened upon a turkey breast that was on sale. Picked it up, 50/50 rub, and threw that on as well. The sandwiches will be delicious.
