For those that smoke/make their own. What cuts do you usually use. I haven’t ventured out of sirloin cuts to make it. I usually make about 3-4 pounds at a time but with the kids and me it only lasts about 3 days.

I really like grinding it and using a jerky gun to make it all even. But also any trimmings that aren’t steak cuts and are relatively uniform tbh
Rump roast and have the butcher freeze and bandsaw it to thickness.

Make my own, because buying it is so damn expensive. I’m completely out of venison and don’t have an open weekend to get out to my stand for at least a month.

The good news is he actually did quit smoking at about the same time.
smoked herring, bottled clams(it looks awful but I love it) and tortillons is salty cheese. I can’t stop eating this stuff. The battle occurs at the grocery store, I either do not buy them and feel pretty good or buy them and eat all that salty cheese way too fast and drink a gallon of water during the night

moose also, so much protein and low on fat. Trickier to cook but when done right hunting meat is so good

I make beef jerky and biltong all the time on a cheap as fuck dehydrator that is at least 30 years old. It's insanely easy and delicious.
Hi Mountain pepperoni seasoned venison jerky is my go to favorite. Archery opened here in Pa. Oct 3rd, the 8 pointer below was kind enough to give me a broadside shot at 20 yards. Still have two doe tags and a lot of season left. I use a Nesco, but oven on lowest setting with the door open a quarter inch works great.

Bucee's is a Texas truck stop chain. They've recently started expanding to Alabama and Florida, I believe. They have everything from furniture to fudge for sale and a wall of beef jerky, and usually some in a deli counter case too.
