I actually get both and vastly prefer the consistency of it when it's been in oil. The main downside of the oil is the added calories, but I'm not much of a calorie counter so...
I accidentally grabbed in veg oil one time and was furious. That said, if you get a packet of dry Italian dressing mix, it'd probably work. I don't do it often, tuna salad with just Italian dressing is a good change up.

Never heard of it in oil before I usually try and get just pouches in water. Eating canned tuna just makes me feel like I’m preparing cat food
Love the shit out of anchovies and sardines FWIW “Solid” tuna is going to have a lot more Mercury than chunk. More mature fish that have been ingesting it longer
